Fastest, most why-didn’t-I-think-of-that recipe ever? I love making homemade frozen ice lollies or Popsicles in the summer but what to do when you don’t have the equipment or energy to make them?
Last summer I over-committed to a ginormous watermelon a couple of days before we were heading away from home for the weekend. I hate waste and was in a rush, so the day we left I just chopped it into chunks and froze it in a Ziploc. I had planned for it to be destined for smoothies or basil watermelon martinis when we returned. My boys had other ideas. They found the frozen chunks a week later and declared them the best lollies ever. And they were right!
Be sure to cut your chunks into decent size pieces so you have something to hold on to. I like to dip mine in a mixture of sea salt and chili flakes as I nibble it. This also makes a brilliant soothing snack for teething babies (without the salt and chili!).
Grown ups can either blend the slices with vodka, mint and lime or eat them as they are, feeling smug in the knowledge that you can save calories for more important stuff like rosé.
