Back to it and facing up to the first full week of school and all the after school stuff since July. I’m reaching for my usual hands-off or super fast meals this week and with everything planned and the shopping done, it feels doable. As always it is one meal for the whole family. Fussy buggers can avoid or pick stuff out if need be. The recipes for most of this will be in my newsletter which goes out this week so sign up if you haven’t already. Here’s the plan…
M O N D A Y
Minced (ground) pork, sage, lemon and Parmesan patties. Basically meatballs but squished flat and fried like mini burgers. With lemon dressed broccoli, carrots and mashed potato. Proper comfort food. I’m making a big batch of the patties to freeze for future weeks and can use them like this or as meatballs.

T U E S D A Y
Frozen brown rice stir fried with ginger, grated carrot and soy sauce. Topped off with crispy skinned salmon, sesame seeds, chopped cucumber and lime. Plus some Pluckypickle kimchi for the adults.

Fish finger tacos with guacamole, salsa and shredded white cabbage dressed with lime.

T H U R S D A Y
I’m teaching in the evening so super-fast pasta with green beans cooked in the same pan and some rocket (arugula) basil, almond and Cheddar pesto.

An easy tray bake with chicken, baby potatoes, tomatoes, peppers and olives with slaw or salad.

Friends to stay so slow cooked lamb shoulder with roast carrots, greens, yoghurt, harissa and flatbreads.
